What is each one?
BIAB
BIAB stands for Builder In A Bottle - a soak-off builder gel painted straight onto your natural nails and LED-cured for strength. It adds a flexible layer that protects the nail as it grows, and is usually refilled about every 3 weeks rather than fully replaced.
Gel
Gel can mean a soft gel polish or overlay, or gel extensions for a little added length. It cures under LED to a high-gloss, long-wear colour and is gentle on the natural nail. Gel is removed with a soak-off, so there is no harsh filing involved.
Acrylic
Acrylic is made by mixing a liquid monomer with a powder that hardens in the air. It is the strongest, most structural option, which makes it the best choice for extra length and shaping. Removal is done with a careful soak-off or file rather than peeling.

BIAB usually lasts around 3 weeks before a refill, depending on your nail growth and aftercare. Maintenance is an infill rather than a full new set.
Is BIAB better for your nails than acrylic?
